The Brigade is pleased to welcome you and share our project of Organic-Regenerative Agriculture and Cuisine.

All the ingredients we serve come from our land and from the work and passion we put into protecting it every day.

As actors and supporting cast in a Comedy where Nature is the protagonist and we are the Narrators, the products of the Earth will stage the show of Nature.

The narrators who will guide you during this performance are many, and all essential, although not present tonight: Khassim Gueye and Mansour Sarr, the true Custodians of the Estate: skilled hands and thoughtful minds in the vegetable garden.

Fabrizio Bartoli taming the Fire, together with a Brigade of young enthusiasts like him. Martina Morelli, in the dining room, will be your “off-camera” narrator of the Story and Life of the Estate.

THE CHEF

Material, Simplicity, Linearity.

These are the main ingredients of my dishes, where texture and flavor intertwine in a balance of contrasting elements: sweet and spicy, dry and fresh, acidic and fatty.

“Dining at the Osteria is a sensory journey and a discovery of vegetarian cuisine through the awakening of primal sensations.

“Random not random”, recreating in the dish a studied randomness in which all chromatic parts, flavors, and aromas are perfectly balanced. This is our experimental vegetarian cuisine.

 

The Fire

“From a personal challenge came inspiration.”

The fire, as the main cooking method of Osteria Ancestrale, a true strength of our vegetarian cuisine.

In our Osteria, we cook over flame, on the embers, or under them. Different techniques that I had already encountered in many of my travels, where food was cooked on rudimentary grills in the streets, simple food with a unique flavor.

And here in our kitchen, those marinades, fresh or dried spices and sauces, and cooking techniques that enhance our vegetables and everything that is produced on the Podere, return.

The difficulty lies in finding the right pairing that makes dishes characterized by continuous experimentation work, which fully express our “farm to table” philosophy.
